Basic Muffin

Ingredients

1 cup flour

1 cup oats

1/3 cup sugar

4 tsp baking powder

1/2 tsp salt

1/4 tsp baking soda (if using yogurt)

1/4 tsp spice

1 lg egg

4 Tbs butter (melted)

1 tsp vanilla

3/4-1 cup liquid

1/2 cup fresh/frozen berries (optional)

Directions

1. Heat oven to 400F.
2. Mix dries.
3. Mix wets.
4. Combine, do not overmix.
5. Bake for 12-15 minutes.


Alt Banana Lime Coconut
Dries:
Regular recipe, plus
1 Tb nutritional yeast
1 scoop whey protein

Wets:
Two ripe bananas
1 lime, zested and juiced
2 eggs
1/2 cup shredded coconut (put into wents after mixing in the eggs)
4 Tbs. Coconut oil (mix in last, after shredded coconut has had at least 5 minutes to absorb liquid)

Notes

The amount of liquid depends upon its density. Apple cider needs only 3/4 cup while buttermilk requires a full cup. If not using oats, then use the higher amount of liquid.
